The GODS MUST BE CRAZY AMBROSIA!!!
In ancient GREEK MYTHOLOGY, ambrosia (Greek: ἀμβροσία) is sometimes the food or drink of the Greek gods (or demigods), often depicted as conferring ageless immortality upon whomever consumed it. It was brought to the gods in Olympus by doves!!! (From Wikipedia)
Now, I don’t know if this salad will bring you immortality, and it is certainly not delivered by doves (although you can try…I have, with devastating failure…) However, I DO believe that any god would be pretty damned (UH OH) stoked to enjoy a big spoonful of this amazing concoction…
This is a salad that contradicts SO many of my food issues. First of all, I do NOT like typical ambrosia…the goopy concoction of canned fruits and far too much dressing is too much for me. My version uses homemade mini marshmallows, fresh fruit, toasted pecans, coconut, and, of course, maraschino cherries with FAR less dressing with MINIMAL sugar. I don’t usually like maraschino cherries, but for some reason, I LOVE them in this salad. Try to make it the day before, and you will be amazed at how the texture improves. Fresh pineapple and orange segments are a MUST…By now, I’m sure you know how I feel about processed fruit…or processed anything…lol x
THE GODS MUST BE CRAZY AMBROSIA
***NOTE*** You can double this recipe, triple it, or multiply it as much as you want…It is a drop and stir recipe…SUPER EASY with AMAZING results!!!
Makes 4 starter portions
1/4 C whipping cream
2 tsp sugar (optional-I use it only if my pineapple is not super sweet)
2 oz Full-fat sour cream (For goodness sake, we are using sooo little here…USE THE GOOD STUFF!!!)
1/2 tsp pure vanilla extract.
2 C homemade mini marshmallows (You CAN use store bought, but just try this once with homemade…Use my VANILLA MARSHMALLOW recipe here)
1/2 C naval orange segments, each one cut into 2-3 pieces keep drained to avoid loose ambrosia
1/2 C fresh pineapple, cut into small squares, about the size of the mini marshmallows. Keep drained to avoid loose ambrosia.
1/2 C sweetened coconut flakes
1/2 C toasted pecan halves, plus extra for garnish
1/3 C halved maraschino cherries, drained
- Pour the cream and sugar into a mixing bowl. Whip very slightly until thickened. Add sour cream and vanilla.
- Add in all salad ingredients at once and stir to combine.
- Cover the bowl with plastic wrap, and allow to sit in the refrigerator overnight
***I REALLY like letting the salad sit overnight…You can serve it after a couple hours, and it will be delicious…but something MAGICAL happens overnight…maybe the gods get involved…:) x
